A Taste of Greece: The Best Tomato Salad Coming Soon

Straight from the chef of one of the most unique restaurants in the Dodecanese, who will cook for one night in Athens.

Symposio at Ark restaurant continues to enhance dining experiences in one of the gems of the Athenian Riviera. Renowned chef Giannis Baxevanis opens his arms and kitchen, welcoming some of the finest representatives of the Greek culinary scene.

Until June 12th, the acclaimed chef Giannis Baxevanis will continue to showcase local flavors at the popular “Ark” in Glyfada, inviting notable representatives of the Greek culinary scene to collaborate. These guest chefs will take Greek cuisine several steps forward.

On March 13th, it’s the turn of “Broadway,” one of the most unique restaurants in the Dodecanese, to present its take on contemporary Greek cuisine.

Chef Giannis Papakonstantinou and his brother Manos, who manages the service, continue the legacy of their family restaurant, which their parents started nearly forty years ago on a quiet street in the center of Kos. Alongside some classic specialties on the menu, a wide range of modern Greek creations showcase imagination, creativity, and skill in contemporary cooking techniques.

The focus on carefully selected ingredients is evident in dishes such as the Kos-style tomato salad with caramelized wine cheese, strawberry, and tomato water, while the meatballs with a deconstructed egg-lemon sauce made from cabbage cream, sour milk, and burnt butter highlight the chef’s desire to season his dishes with an element of surprise.

Starters (to share): Tomato salad with basil, strawberry, mizithra cheese, Kos wine cheese / Sea bass carpaccio with grape and taramas, radish, sesame, oil, chili / Fried pepper with feta, Florina pepper cream, pistachio, mint oil / Meatballs with cabbage cream, zucchini, sour milk, burnt butter

Main Course: Pork with chickpeas, carrot, sausage, roasted onion or Sea bass “fricassé,” cauliflower cream, asparagus, lettuce

Dessert: Greek coffee cream, thyme ice cream, hazelnut praline, sesame streusel

Price per person: €55, which includes a full meal with starters, main course, and dessert.
